There’s not much that Angela Hartnett and Luke Holder, of Hartnett Holder & Co, don’t know about meat and fish and how to cure it; whether it’s loin of pork cured with lavender, or salmon prepared in their very own smokehouse.
They’re experimenting all the time – but what else would you expect from Angela Hartnett, who trained under Gordon Ramsay and is one of the UK’s most respected female chefs?
Each of the three courses in this headline event features home-cured and smoked meats or salmon from HH&Co's very own Smokehouse, done in the Italian style for which this restaurant has become justly renowned.
